Hey!!!!! How is everyone? What have you been up to this week? Can you believe that it is Wednesday? The week is halfway over! And I still have TONS of exams……yuck.
Yesterday, I took my first challenge exam. I opted for the Webpage design test, thinking that it would be easy. Well, I was sure wrong! Most of my grade will actually come from building my own website, which took about 3 hours to do. I had initially planned on taking two exams yesterday, but that one took up my entire afternoon! Fun stuff.
It has recently struck me how incredibly boring I am. I take tests, mope around the house, bake occasionally, and go to the gym. That’s pretty much it. And then I share it all with you guys, and throw in some random musings and stories for good measure…..:P
Speaking of stories, I happen to have a cute one. I’m a klutz and fall down….a lot. Every day, I go to the bread store to buy bread, cheese, lunchmeat, etc. There is this sweet, poor man in a wheelchair who sits outside the bread store every afternoon and chats with customers. He knows pretty much everyone, and everyone likes him. So anyway, he has noticed that I tend to trip a lot. Now, whenever I’m leaving the store, he says: “See you tomorrow! Be careful and don’t fall down on your way home!”. He also tells me if there is a lot of traffic on a particular day, so that I know to pay even more attention to my surroundings. Always watchin’ out for me! hahahaha

Heeey!!! What’s up??
I have one final down and 5 to go! I basically took the easiest one yesterday because I figured that I should get it out of the way so that I wouldn’t worry about it while studying for my other, more difficult tests. It was nice to be able to check something off of the list so early in the week, though!!!! Now, all I have to do is take the other 5 finals, and then order 6 challenge exams and take them! Then, I’ll officially be done with my sophomore year of high school!!!!!!!
Now, you all know by now that I love me a good circuit style workout, so when I found this one a couple of weeks ago on Jessica’s site, I couldn’t wait to try it out. Wow!!!! It was pretty stinkin’ tough!!!!!! Which means I get to bake some of her recipes and its ok if I eat an entire batch!!! 😀 Seriously though, if you’re looking for a good strength/cardio combo workout, check this one out!!!
So, by now you’re probably wondering about the title of this post, especially since I haven’t even mentioned Nutella yet. While we were in the States, a couple of our friends lived in our apartment, and apparently one of them bought some Nutella. I have absolutely no idea why it took me so long to try it out, given my love of both chocolate and nut butters, but last night I finally did and LOVED it!!! Now I know there are probably a TON of chemicals and sugar in this stuff, but it was AMAZING!!!! Don’t worry Dark Chocolate Dreams or even just plain ol’ peanut butter, I haven’t forgotten you and your place in my heart has not been taken. I’m sure there is room enough for everyone!!! hahaha

What is your favorite “flavored” nut butter????? Don’t make me choose between nutella or dark chocolate dreams, because I can’t!!!! I’d also love to try Mighty Maple someday soon!!!!! 😀

Hey!!!! Hope you all had a great weekend! I did! Yesterday, my sister and I made mom a single serving cupcake for Mother’s Day!!!! Since we made it at breakfast time, we went with a plain cupcake, with brown sugar and cinnamon sprinkled both in the middle and on top! Like monkey bread, but in cake-y form. Mom liked it so much, and it smelled so good, that I had to make a normal-sized cake with the same flavors! Here’s the recipe I used:
Monkey Cake (original recipe found here)
- 1/2 cup brown sugar
- 1/4 cup sifted all-purpose flour (sift before measuring)
- 1/4 cup butter, room temperature
- 1 tablespoon cinnamon
- 1 1/2 cups sifted all-purpose flour (sift before measuring)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, beaten
- 3/4 cup sugar
- 1/3 cup melted butter
- 1/2 cup milk
- 1 teaspoon vanilla extract
Topping. In small mixing bowl, combine topping ingredients. Blend with fork until crumbly. Set aside.
Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl. In a medium bowl, beat together beaten egg and 3/4 cup sugar and 1/3 cup melted butter. Add milk and vanilla. Stir in flour mixture and mix well.
Pour batter into a greased and floured 8-inch square or 9-inch layer-cake pan. I poured in half of the batter, sprinkled it with some brown sugar and cinnamon (maybe 2-3 T each?), poured in the other half and sprinkled the topping crumb mixture evenly over the cake. Bake at 375° for 25 to 30 minutes, or until cake tests done. Partially cool in pan on wire rack. Cut coffee cake into squares while still warm.
This was so, so yummy!!!!!!!! I can’t wait to “healthify” it, so that we can enjoy it more often!!!
I absolutely loved having the opportunity to go to the gym last week and therefore I just had to take some sweaty post-workout pics in the bathroom! hahaha

So, a couple of days ago, I was doing some research. You see, I’ve been waking up feeling not-so-great some days and was wondering if it was just a side effect of my attempts to gain weight or if it was something else. I started to think about what I ate the nights before I woke up feeling gross, and mostly, it was bread or crackers. So, I researched gluten sensitivity, and a lot of the symptoms matched up (mood swings, messed-up stomach, etc). But then, I thought that a lot of those symptoms could easily apply to an eating disorder, so I researched a link between the two. Turns out that an eating disorder can actually trigger a gluten sensitivity. Its really hard to go gluten-free here, but I am trying to avoid it at night, and see how that works out. If I start to feel better, then we’ll know that I have a slight sensitivity to gluten. I’ll keep ya’ll updated!
Next, I know most of you read Janae’s blog, and if you don’t you should definitely go check it out. She’s been training like crazy for the Boston Marathon, but just found out that she’s got a femoral stress fracture and can’t run. So, Bess started a send a virtual hug to Janae thing on her blog, which thought was super sweet! I’m posting my hug here:

Nothing much is going on here……a heck of a lot of school. Oh and last night I finally got Water for Elephants on my Nook! I’m sooo excited because I’ve been wanting to read it for a super long time!!!!! What are some other good books out there??? I’m sooo out of the loop, which is sad because I LOVE a good book! 😀

Heeey everyone! Hope you all had a wonderful weekend!! I sure did! We relaxed, had family time, and went to church. My cat even had some relaxation time with dad:
Before I forget to mention it, I got an awesome workout in on Friday! A few weeks ago, I cam across this circuit, and let me say, it doesn’t look that hard, but by the fourth time you are doing pushups, it IS!!!! 😀
Today’s a busy day for my mom, so I thought I’d tackle breakfast. I made my first-ever scones!!!! They were actually pretty easy to throw together, and everyone seemed to like them! I confess that I haven’t actually eaten one yet, but will for a post-workout treat! 😀 Anyway, here’s the recipe that I used:
Banana Scones (adapted from Food.com)
- 2 cups flour
- 3 T brown sugar (packed)
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 6 T butter
- 8 T milk (I ended up adding a little more)
- 1 teaspoon vanilla extract
- 2/3 cup diced banana

Yesterday was a pretty good day for me! For starters, I got an awesome kickboxing workout in! I’m pretty sure that it was my pre-workout fuel of PB Capn’ Crunch (a gift from the second group) that did it. After all, when isn’t a good time to eat sugary breakfast cereal? Actually, I’m not much of a cereal person, and I usually don’t like the over sweetened ones (aka Fruit Loops, Cocoa Puffs, Lucky Charms, Frosted Mini Wheats, etc). Growing up, my favorite cereal was always Cheerios. Besides that, the only other cereal I ever really liked was Honey Nut Chex. Which is why I’m suprised at how much I love the pb Capn’ Crunch! 😀 I usually eat cereal as a snack anyway, because its not filling enough for me to make a meal of it. What are your favorite breakfast cereals?
Anyway, I also tried a brand-new sandwich for lunch. First, I thinly sliced up half a large banana, then I drizzled some honey on it, and topped it all off with cinnamon. That alone would have been yummy, but then I got the idea to heat up my sammie on the skillet so that the banana would melt and the honey would go all gooey! Best. Decision. Ever. 😀 And super easy too! I already love pb+banana sandwiches, and I wanted to try something different, and it definitely payed off!
Oh and by the way, my bread is whole wheat with grated carrots! You don’t really taste the carrot flavor, but they give the bread an awesome texture and nutritional profile! Its my all time favorite sandwich bread! 😀
A couple of days ago, when I talked with my doctor, she suggested that I start journaling whenever I feel super stressed out. I have been doing that, and I really do think that it helps. Sometimes I feel that I can write out stuff that I can’t talk about as well. I haven’t even had a meltdown in the past couple of days, which means that I’m still on track! I’ve definitely been feeling less stressed, both as a result of journaling and of our life getting back to its normal craziness as opposed to the group craziness. Not that I minded the groups being here….we had lots of fun! 😀

Thanks for all of your super sweet comments and ideas on yesterday’s post! I did call my doctor, and she said that as long as I don’t lose any more weight, and stay on the right track, she has no problem with me going to the NSLC! Sooo, I applied yesterday, and sent in my scholarship application….now all I have to do is wait until April 11th to see if I did get the scholarship. If not, then I guess that the NSLC wasn’t in God’s plan for me this year….we’ve done everything that we could do. I honestly have NO idea how I’m going to be able to wait 2 weeks until the scholarship results come in…hahahaha. It’ll be a good practice in patience I suppose….
Anyway, yesterday I had my new favorite sweet ‘tater combo once again! This time, I made it more dessert-like by using dark chocolate dreams. Also, I figured that I like honey on my pb sandwiches, so I drizzled some on the sweet potato as well. It was awesome!!! 😀 This was at lunch, so I had a side salad with some sauteed kale, assorted veggies and some turkey. All in all, it was a fun, different lunch! I definitely needed a change! I’m really bad about finding something I like to eat, and then proceeding to eat it every day until I never want to see it again….then I switch, do the same thing, and so on and so forth. I usually have to make myself eat different foods, but I’m always glad that I did! I sometimes tell myself that if I like something enough to eat it every day, I don’t want to ever get sick of it, so I should switch up my meals!
What are some of your favorite lunches? Do you ever get stuck in a food rut? How do you get out of them?
